Salmon - a great source of protein and fat, and lets not forget those great micronurtients it contains. It is recommended that we consume at least 2 portions of oily fish/per week and salmon is a perfect example.
This is one of my favourite ways of cooking salmon, adds a lot of flavour and keeps the fish very moist.

RECIPE:
HOW TO:
- Salmon fillet (170grams)
- Jamaican Jerk spice mix
- 1/2c dry basmati rice
- 6 cherry tomatoes
- 30g garden peas
- 30g sweetcorn
HOW TO:
- Boil rice until cooked, add tomatoes and boiled peas and corn. Set aside with lid on.
- Coat the salmon fillet in spice mix
- On a hot pan, stove top, either spray lightly or use coconut oil
- Cook salmon on high heat to crisp the outside, turn on all side.
- Cook with lid on for 5-10 mins or until cooked.
- Serve the salmon on the bed of colourful rice!
