Whilst on vacation I tried a lot of new tasty foods including lots of salads, so I decided to recreate one of the salads that I tried at the Tusker House African Buffet. This recipe will serve about 3/4 people.

- 100g of 3 types of cooked bean (I used Cannellini, Flageolet and Adzuki but any will do)
- 60g cooked sweet corn
- 1/2 small lemon's juice
- 3 stems of fresh coriander
HOW TO:
- Simply mix everything together
- Add the coriander leaves
- Store in the fridge
