For dinner tonight I decided to get creative in the kitchen and then I saw a cauliflower pizza on Instagram..went to my fridge... NO CAULIFLOWER but yes a broccoli, so I figured why not experiment with a new recipe. This is by far the best 'healthy' pizza recipe I have used.

- for the pizza base - 150g broccoli, 2 tbsp ground oats, 1 egg white, 2 tbsp greek yogurt, 1/2 tsp baking powder, salt and pepper
- for the toppings - chicken breast, Jamaican jerk spice mix, sweetcorn, red pepper, mushrooms, chopped tomato, avocado
HOW TO:
- For the base - blend all ingredients together in a blender, spoon into 2 circles on baking paper on a baking tray, cook for 20 mins at 250c in the oven
- For the toppings - cook chicken and mushrooms in the spices, simmer chopped tomato with the spices, chop pepper finely and boil with corn, slice avocado
- When the bases are cooked put on your toppings, and pop back in the oven for 2 minutes. DONE!
