Made these salmon patties a while ago and LOVED them! They had great flavour, held together well, super easy and very nutritious!

- 200 grams raw new potatoes
- 150 grams salmon fillet (boneless and skinless)
- 100 grams raw zucchini grated
- Garlic and Onion powder, chilli flakes, salt and pepper
HOW TO:
- Boil and mash the potato, set aside
- Bake salmon in the oven until cooked through
- In a bowl combine, mashed potato, grated zucchini, spices and broken up salmon fillet
- Form 4/5 patties with your hands and fry stove top
- Serve on a bed of spinach and cherry tomatoes, ENJOY!
