This recipe is my own take on a spanish risotto. It is packed full of flavour and is completely healthy.

- 75g red pepper
- onion and garlic powder
- 200g tinned chopped tomato
- 300ml water
- 1/2c dry rice
- 1c spinach
- 160g cooked King Prawns/Shrimp
HOW TO:
- Pan fry the thinly sliced rep pepper with the onion and garlic powder for 3-4 mins
- Add the chopped tomato, water and uncooked rice
- Simmer with lid on for 10 mins (or until rice is cooked), you may need to add more water
- Add prawns and spinach, simmer for 2 mins
