As I said before one of my fav protein sources is chicken. I have many different ways that I like to cook it but at the moment this has got to be my fav....
RECIPE:
- Chicken breast
- Oregano and Chilli flakes
- Red pepper (optional)
- Frenches American Mustard (one of the only gluten free mustards)
HOW TO:
- Chop chicken into smallish pieces
- Slice red pepper into fine strips
- Spray a non-stick pan, or use coconut oil, and fry up the chicken with plenty of herbs and spices. Use high heat and try not to move the chicken around too much to get a nice crispy coating.
- Add the red peppers and continue cooking until chicken is cooked through.
- Leave to rest for 1 minute (makes the chicken softer)
- Serve up and top with mustard
