Salad lovers and non-salad lovers will both love this recipe! Thai style chicken breast and nut salad.

- 2c raw spinach
- 8 cherry tomatoes
- 75g ripe avocado
- 1 tbsp pine nuts
- 50g red pepper (finely chopped)
- 150g chicken breast
- Thai spice mix
- 1 Gluten Free Wrap (I use Warboutons)
HOW TO:
- Oven bake the chicken in thai spices until cooked, slice
- Using all the raw ingredients above make the spinach salad
- Cut up a wrap into small triangles for the 'chips' and bake on an oven tray for 5 mins
- Place the chicken and 'chips' on top of the salad and then sprinkle the nuts
